Baked Potato Soup

I’m not a huge fan of soup but I could eat an entire pot of Baked Potato Soup and not think twice about it!

Baked Potato Soup

2/3 C. Butter
1/4 C. Onion, chopped
2/3 C. Flour
6 C. Milk
2-3/4 lbs Potatoes (approx. 4 large baking potatoes), peeled, cooked and cubed
1 small bag Oscar Mayer Bacon Bits
1-1/4 C. Shredded Cheddar Cheese
8 oz. Sour Cream
3/4 tsp. Salt
1/4 tsp. Pepper

Potatoes:  The method in which you cook potatoes is entirely up to you.  I like to peel, cube and boil.  You may like to bake or microwave.  It doesn’t matter.

In a large dutch oven, melt butter over low heat.  Add onions.  I like to let them cook down for just a few minutes.  Then stir in flour until smooth and bubbly.  Gradually add milk*, stirring constantly, until sauce has thickened.  Add potatoes and bacon bits.  Continue to cook and stir until soup begins to bubble.  Reduce heat and let simmer for 10 min.  Add cheese, salt and pepper.  Stir until cheese is melted.  Serve immediately.  Serves 6-8.

*I like to warm my milk before adding to flour mixture.  It helps speed up the thickening process.  Simply put milk in a microwavable bowl and heat for few minutes.  You will also need to up your heat when adding milk, I would start with medium heat.  Obvisously, if it begins to stick, cut the heat back.
