Buckeyes (aka Peanut Butter Balls)

Who doesn’t love a Buckeye?  Peanut butter dipped in chocolate!  Yum!!!

Buckeyes

7 C. Powdered Sugar
1- 1/4 C. Butter, softened
18 oz. Creamy Peanut Butter   – DO NOT use reduced-fat, it will change the consistency.
Chocolate Almond Bark

Mix first 3 ingredients together.   Roll into small balls and place on a cookie sheet lined with wax paper; refrigerate.  Melt almond bark.  I like to melt mine on the stove but microwave is fine also.  Take a toothpick and place into ball, dip into chocolate.  Put back on wax paper and let harden, then refrigerate.

This recipe makes a lot!  I hope you enjoy them!

  1. LOL. I love how everyone attempts to use “low-fat” peanut butter with a recipe that requires sugar, butter, and chocolate. What are a few extra calories going to hurt?!? 😉 At least that is what I am telling myself!
