Cranberry Salad

I can’t express how much I LOVE this cranberry salad!!!  Not only is it delicious but it is a beautiful dish – vibrant red!  You cannot go wrong with this salad.  Try it for Thanksgiving or Christmas!  🙂

This recipe was given to me by my good friend Marinda and her Great Aunt Mildred.

Cranberry Salad

1 lb. cranberries, washed
2 whole oranges, peeled
1 3/4 C. sugar
1 C. pecans, chopped
1 large can crushed pineapple in syrup
3 small pkgs cherry jello
2 C. hot water & 1 C. cold water

Grind cranberries & oranges (a food processor works great!)  Cover with sugar.  Dissolve jello in hot water, then add cold water, letting jello cool.  Add pineapple, pecans & cranberry mixture.  Pour into a mold (or whatever dish you prefer.)  I like to put my mine in a glass dish then once it’s jelled, I then scoop it into a decorative bowl.   Let set for 24 hrs.

*Once you have grinded the cranberries and oranges, and then added the sugar, you can put this mixture in the freezer.  You can have cranberry salad anytime of the year!
